Ham and Corn Quiches

Recipe from New Idea
cooking oil
8 slices white bread
mozzarella cheese
2 eggs, beaten
125g corn kernel
200g shaved ham, torn apart
1/4 cup mozzarella cheese
Grease muffin pan with cooking oil.
To make filling, place eggs, corn, ham and cheese in a medium bowl.
Mix well.
Cut crust from bread.
Use a rolling pin to flatten bread slices.
Line pan holes with slices.
Bake in a hot oven (200 degrees C) for 5 minutes.
Spoon filling evenly into hot bread cases.
Sprinkle with cheese.
Return to oven.
Cook for about 20 minutes, until filling is just set.
Remove from oven.
Makes 8.

Brunch Tart

Recipe adapted from Woolworths fresh
1 sheet butter puff pastry. thawed
olive oil
1/3 cup mozzarella cheese, shredded
1 slice honey leg ham, cut into 3cm strips
2 button mushrooms, sliced
4 eggs
4 cherry tomatoes, halved
Preheat oven to 180 degrees C.
Grease muffins tray with olive oil.
Cut each pastry sheets into quarters,
Place pastry into muffin cups, pressing down lightly.
Sprinkle 2 teaspoon of cheese into each cup, add a few slices of ham and mushroom.
Crack an egg into each muffin cup, top with tomato.
Sprinkle the remaining cheese on top.
Bake for 25 minutes or until egg have set.
Serve while still warm

Croque Madame

Recipe adapted from Rachael Ray
2 tbsp butter
1 rounded tbsp all purpose flour  
1 cup milk
Salt and pepper
2 tsp Dijon style mustard
2 slices wholemeal bread, toasted
2 large eggs
2 slices honey baked ham
2 slices deli Swiss cheese
To make béchamel sauce, place a small sauce pot over medium low heat and melt 2 tablespoons butter in it. 
Whisk in a rounded tablespoon of flour and cook 1 minute or so.
Whisk in milk and bring to a bubble then drop heat to low.
Season the sauce with salt, pepperand Dijon.
When sauce coats back of a spoon, turn off heat.
To cook the sunny side up, heat 1 tablespoon of butter in a medium nonstick skillets over medium low heat.
When butter melts add 2 large eggs to the skillet, keeping the whites separate from each other.
To assemble, top turned bread liberally with sauce, ham and cheese on each slice of bread.
Use a spatula to transfer the eggs to the tops of the open faced sandwiches.
Toast the sandwich for 5 minutes to melt cheese and set sauce and eggs.
