Chocolate Chip Cookies

Recipe adapted from Amandeleine
1  1/4 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
110g butter
3/8 cup white sugar
3/8 cup brown sugar
1/2 tsp vanilla extract
1 egg
1 cup dark chocolate chips
Preheat oven to 190 degrees C.
Combine flour, baking soda and salt in a medium bowl.
Set aside.
Cream butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl.
Add egg.
Gradually beat in flour mixture.
Stir in chocolate chips.
Refrigerate dough for at least 1-2 hours.
Bake for 8-10 minutes, until edges are lightly browned. (Cookie centers will not look completely baked and will finish off after being removed from the oven.)
Cool on pan for 5 minutes and transfer to a cooling rack.
Makes 25 cookies.

Oreo Stuffed Chocolate Chip Cookies

110g softened butter
3/8 cup packed light brown sugar
1/2 cup granulated sugar
1 large egg
1/2 tbsp vanilla extract
1  3/4  cups flour
1/2 tsp salt
1/2 tsp baking soda
1  cup semi-sweet chocolate chips
1  package Double Stuff Oreo cookies
Preheat oven to 180 degrees C.
Cream butter and sugars together with a mixer until well combined.  
Beat in eggs and vanilla.
In a separate bowl mix the flour, salt and baking soda. 
Slowly add to wet ingredients along with chocolate chips until just combined.
Using a tablespoon take one tablespoon of cookie dough and place on top of an Oreo Cookie. 
Take another tablespoon of dough and place on bottom of Oreo cookie. 
Seal edges together by pressing and cupping in hand until Oreo cookie is enclosed with dough.  
Place onto a baking paper lined baking tray and bake cookies 9-15 minutes or until golden brown.
Let cool for 5 minutes before transferring to cooling rack.

Makes 11 enormous cookies. It is like 3 cookies in one afterall!

Vanilla Cupcakes

dark chocolate chips, raisin, white chocolate chips

55g unsalted butter
555g caster sugar
55g self-raising flour
1/4 tsp baking powder
1 eggs
1/4 tsp vanilla essence
a handful of dark & white chocolate chips
a handful or raisins
Preheat the oven to 175 degrees C.
Place 4 paper baking cases in muffin tins.
Place all the ingredients in a medium bowl and beat with an electric whisk until smooth and pale, about 2 to 3 minutes.
Spoon half the mixture into the cases.
Add in the dark chocolate chips, white chocolate chips and raisin.
Spoon the remaining mixture into the cases.
Bake for 20 minutes.
Remove the tins from the oven and cool for 5 minutes.
Then remove the cupcakes and cool on a rack.

Dark Chocolate Brownies

Recipe from BETTER basics
250g dark chocolate
200g unsalted butter
3 eggs
200g caster sugar
80g plain flour
60g dark cocoa powder
50g dark chocolate chips
50g white chocolate chips, plus a handful for decoration
preheat oven to 160 degrees C.
Line a pan with baking paper.
Put dark chocolate and butter into medium heat proof bowl over a pan of barely simmering water. 
Stir until just melted, then remove bowl from heat.
Beat in eggs and sugar.
Sift flour and cocoa together, then fold into chocolate mixture.
Add chocolate chips and mix well, then spoon into prepared pan.
Decorate with white chocolate chips.
Bake f0r 30 minutes or until just firm.
Cool completely on wire racks.
Slice and serve.

Dort’s Shortbread

Recipe from BETTER basics
45g icing sugar
125g unsalted butter, softened
1/2 tsp vanilla essence
190g plain flour
dark chocolate chips, to decorate
Preheat oven to 160 degrees C.
Line oven tray with baking paper.
Put icing sugar and butter in the bowl of an electric mixer and beat on medium until light and creamy.
Beat in vanilla.
Gently fold in flour, and mix until smooth.
Roll tablespoons of mixture into balls, then put on prepared trays.
Flatten each ball with a fork, then topped with dark chocolate chips.
Bake for 20 minutes or until pale golden and firm.
Cool completely on wire rack before serving.
Makes 15
