White Chocolate Chip Cookies

1 1/8 cup all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
112g butter, room temperature
1/2 cup brown sugar
1/4 cup sugar
1 egg
1 tsp vanilla essence
1 cup white chocolate chips
Preheat oven to 180 degrees.
In a medium bowl, mix flour, baking soda and salt and set aside.
With a mixer, beat butter and both sugars until well blended.
Beat in eggs and vanilla essence.
Add flour mixture in two additions until combined.
Stir in 3/4 cups of white chocolate chips.
Use a tablespoon to drop cookie dough on baking paper about 2 inches apart.
Bake for 10-12 minutes.
Tip: About half way through baking, sprinkle reserved chips on top of cookies. This is just to make them prettier so, some of the chips are seen on top.
