Dort’s Shortbread


Recipe from BETTER basics
45g icing sugar
125g unsalted butter, softened
1/2 tsp vanilla essence
190g plain flour
dark chocolate chips, to decorate
Preheat oven to 160 degrees C.
Line oven tray with baking paper.
Put icing sugar and butter in the bowl of an electric mixer and beat on medium until light and creamy.
Beat in vanilla.
Gently fold in flour, and mix until smooth.
Roll tablespoons of mixture into balls, then put on prepared trays.
Flatten each ball with a fork, then topped with dark chocolate chips.
Bake for 20 minutes or until pale golden and firm.
Cool completely on wire rack before serving.
