Chewy Chocolate Chip Cookies

 
 
Recipe from BETTER basics
Ingredients
125g unsalted butter, softened
55g caster sugar
90g dark brown sugar
1/2 tsp vanilla essence
1 egg
175g plain flour
1/2 tsp bicarbonate of soda
50g dark chocolate, broken into small chunks
50g white chocolate, broken into small chunks
 
Method
Preheat oven to 180 degrees C.
Line oven tray with baking paper.
Put butter and sugar into the bowl of an electric mixer and beat on high for 3 minutes or until light and creamy.
Add vanilla and egg.
Beat until smooth.
Sift flour and bicarb into butter mixture.
Do not overmix.
Fold in chocolate.
Roll tablespoons of dough into balls and put on prepared tray, allowing for spreading.
Press flat.
Bake for 12-14 minutes or until just set.
Cool completely on wire racks.
